Ingredients:
1 large green pepper, cut into 2 inch pieces
1 medium onion, cut into 4 wedges
2 sweet potatoes, cut into 2 inch pieces
2 medium carrots, cut into 2 inch pieces
2 potatoes, cut into 2 inch pieces
2 tablespoon(s) vegetable oil
2 tablespoon(s) brown sugar
1/2 teaspoon(s) dried thyme
1/4 teaspoon(s) salt
Directions:
1. Preheat oven to 400F. Lightly oil a large baking dish. In the baking dish, toss the vegetables with the oil. Sprinkle the vegetables with the brown sugar, thyme and salt and toss again. Roast for 30 to 40 minutes until tender. Turn vegetables every 15 minutes.
