This is a delicious quick side dish, pair with chicken or fish. Try different vegetables like eggplant, zucchini, or yellow squash.
Ingredients:
1/2 c red bell pepper, cut into strips
1/2 c yellow bell pepper, cut into strips
1/2 c onion, thinly sliced
2 t no-salt-added vegetable or chicken broth
1 t flaxseed or olive oil
Directions:
1. Heat oven to broil
2. Place veggies in a baking dish
3. Brush and blend with broth and oil
4. Broil for about 10 minutes, turn veggies about half way through.
