South Beach Recipe
Ingredients:
1 lb asparagus
1 medium zucchini
1 medium squash
1 medium green pepper
1 medium red pepper
1 medium red onion
3 tbsp extra virgin olive oil
1 tsp salt
1/4 tsp black pepper
Directions:
1. Heat oven to 450 degrees.
2. Cut veggies into bite-sized pieces.
3. Toss together with oil, salt & pepper.
4. Lay in single layer on cookie sheet.
5. Bake 30 minutes, turning occassionally until golden brown and tender.
