A mainstay of my wife's diet
Ingredients:
4 onions
1 red pepper
1 green pepper
1 yellow pepper
3 tomatoes
10 ounces frozen green beans
3 garlic cloves
1/2 cup fresh cilantro, chopped
2 tablespoons olive oil
1 tablespoon chicken soup powder or 1 tablespoon onion soup mix
1 teaspoon coarse salt
1 teaspoon black pepper
Directions:
1. Cut all veggies into strips.
2. Mix all ingredients in a bowl. Pour into a baking pan, and cook on high (200C) for 1/2 hour.
3. Lower temperature to 160C and leave at least an hour and a half.
