Roasted Tomatoes

Ingredients:
3 lbs plum tomatoes, cut in half
2 tablespoons extra virgin olive oil
8 garlic cloves, cut in large chunks
2 teaspoons dried basil
1 pinch coarse salt
1 pinch ground black pepper
1/2 teaspoon white sugar
Directions:
1. Toss all ingredients together. Pour onto a roasting pan. Arrange tomatoes cut side down. Roast in preheated 375°F oven for 20-30 minutes.
2. Remove skins and place tomatoes in a bowl. Drain oil from pan into bowl, and add additional olive oil to cover. Store, tightly covered, in refrigerator up to 4 weeks.
