Roasted Tomato & Red Pepper Pasta

a delicious, healthy pasta dish that is really easy to make! the ingredients don't really need to be measured, and you can use more or less pepper/tomato depending on what you have around. it can also be easily adapted by adding herbs, spices, meat, cheese or other vegetables too
Ingredients:
6 large tomatoes, quartered
2 large red peppers, deseeded and roughly chopped
2 garlic cloves, crushed
2 tablespoons low-fat creme fraiche
350 g dry pasta (any shape)
Directions:
1. put the tomatoes, peppers and garlic in a roasting tin and roast in a medium oven for about 40mins, or until soft and juicy.
2. meanwhile, cook the pasta as per packet directions.
3. add the cooked pasta and creme fraiche to the roasting tin mixture and stir well.
4. put back in the oven for 5 minutes to heat through.
5. serve and enjoy!
