Roasted Sweet Potatoes

Whether you are serving turkey, roast beef, or ham for Easter, oven-roasted sweet potatoes will be a great side dish. As well, roasting vegetables brings out their sweet flavour.
Ingredients:
4 cups sweet potatoes, coarsely chopped
1 vidalia onion, m sliced in wedges
2 garlic cloves, sliced
3 tablespoons olive oil
1 tablespoon fresh thyme, chopped
1/2 cup pecan halves
1 tablespoon balsamic vinegar
salt and pepper
Directions:
1. In a large bowl, combine potatoes, onion, garlic, oil and thyme; toss well to coat. Pour vegetables in to a shallow roasting pan or jelly roll pan.
2. Bake in a 425F oven, turning frequently, for 40-45 minutes or until vegetables are soft and golden brown.
3. Add pecans during the last 10 minutes of baking. Drizzle with vinegar. Season with salt and pepper.
