Roasted Squash And Puy Lentil Salad

I'm totally hooked on squash at the moment! With spinach, squash and lentils, I reckon this salad has more nutrition than any vitamin pill!
Ingredients:
a few handfuls of spinach, chopped
1/4 cup puy lentils, cooked
1/2 a squash, cut into thick strips
blue cheese, cubed
croutons (just drizzle some oil on cubes of bread and bake for 10 mins)
olive oil
seasoning
balsamic vinegar
Directions:
1. 1. Cook the lentils until tender
2. 2. Drizzle the slices of squash with oil, season, and roast at 170C for 30 minutes
3. 3. Mix together the spinach and lentils with the roasted squash. Dress with cheese, croutons and a drizzle of balsamic.
4. Enjoy!
