This recipe comes from the Sonoma Diet Companion booklet. I love garden fresh green beans and especially spicy green beans. Enjoy this recipe with anything that you can think of it's that good or just by it's self!
Ingredients:
1 lb green beans (trimmed)
1 tablespoon olive oil (extra, virgin)
1 tablespoon soy sauce
6 garlic cloves (finely minced)
2 teaspoons honey
1 teaspoon ginger (grated fresh)
1/2 toasted sesame oil
1/4 teaspoon red pepper (crushed)
1/2 teaspoon kosher salt
1/2 teaspoon pepper (freshly ground)
4 teaspoons toasted sesame seeds
Directions:
1. Preheat oven to 450°F Line a shallow baking pan with foil. Place beans in the prepared baking pan.
2. Drizzle the green beans with olive oil and season with Kosher salt and pepper; toss gently to coat. Spread beans in an even layer. Roast for 10 minutes.
3. Meanwhile, in a small bowl, combine 1 tablespoon soy sauce; 6 cloves of garlic minced {1 tablespoon minced} 2 teaspoons honey; 1 teaspoon grated fresh ginger; 1/2 teaspoon toasted sesame oil; and 1/4 teaspoon crushed red pepper. Drizzle over beans; toss gently to coat. Spread in an even layer. Roast about 10 minutes more or until beans are dark golden brown in spots and have started to shrivel. To serve, sprinkle with 4 teaspoons of toasted sesame seeds.
