Roasted Sesame Asparagus
Ingredients:
1 1/2 lb asparagus
1 1/2 tsp dark sesame oil
1 tbsp balsamic vinegar
1 1/2 tsp sesame seeds, toasted
1/2 tsp crushed red pepper
1/8 tsp salt
1/8 tsp black pepper
1 tbsp parmesan cheese, grated
Directions:
1. Preheat oven to 450.
2. Snap off tough ends of asparagus. Arrange asparagus in a single layer on a jelly roll pan coated with cooking spray; brush with sesame oil.
3. Bake at 450 for 10 minutes or until crisp tender. Remove pan from oven.
4. Add vinegar, sesame seeds, cheese and red pepper to asparagus, tossing gently to combine.
5. Place asparagus on a platter; sprinkle with salt and black pepper to taste.
