A simple preparation for roasted potatoes with visual presentation appeal that's a little different than most roasted potato recipes. Vary the spices/seasonings according to your preference.
Ingredients:
1 pound russets (approximately 3 large potatoes)
3 tablespoons extra virgin olive oil
3/4 teaspoon adobo seasoned salt
1/2 teaspoon dried oregano
1/8 teaspoon black pepper
Directions:
1. Preheat oven to 350 degrees F.
2. Scrub potatoes well under running water and slice the long way (without peeling). Place on a baking sheet large enough to accommodate all the slices without overlapping. Drizzle with olive oil and turn to coat well.
3. Bake for 15 minutes, then turn slices over with a spatula and return to oven for 15 more minutes.
4. Meanwhile, mix seasonings/spices. Remove potato slices from oven and sprinkle evenly with about half the mixture, then turn over and sprinkle with the rest.
5. Return tray to oven and bake 20 more minutes, or until potato slices are brown and crispy.
