Ingredients:
1 pound small red potatoes
1 tablespoon olive oil
1/2 teaspoon salt
1/8 teaspoon pepper
2 tablespoons grated parmesan cheese
Directions:
1. Cut the potatoes into 1/4-in.-thick slices; toss with oil. Place in a single layer in a greased 13-in. x 9-in. baking pan. Sprinkle with salt, pepper and Parmesan cheese. Cover tightly with foil. Bake at 350° for 40 minutes or until tender. Yield: 4 servings.
