Roasted Red Peppers With Bacon And Cheese

This recipe came from an estate sale. I obtained it when I purchased the family collection from the Marcus Estate in Greenville, Texas in 1994.
Ingredients:
1/2 cup ranch dressing
1/2 cup 6 italian cheese blend
1/2 cup real bacon pieces or bits
6 red potatoes quartered
1 tablespoon chopped fresh parsley
Directions:
1. Preheat oven to 350.
2. Mix dressing, cheese and bacon in a large bowl then add potatoes and toss gently.
3. Spoon potatoes onto a lightly greased baking sheet then cover with foil and bake 45 minutes.
4. Remove foil and bake 15 minutes longer then cool slightly and sprinkle with parsley.
