Ingredients:
4 lg tomatoes, chopped
1 lb mozzarella cheese, cubed
1/2 c jarred roasted red peppers, chopped
8-10 fresh basil leaves, chopped
1/4 c olive oil
1 clove garlic, minced
1/2 tsp coarse sea salt
black pepper, freshly ground
1/2 lb salami, sliced thin (optional)
1/2 c olives, your choice
Directions:
1. Combine tomatoes, cheese, peppers, salami, olives and basil in a large bowl. Mix olive oil with garlic, salt and pepper; drizzle over tomatoe mixture and toss gently.
