This is a quick hummus to make up and can be used as a dip with crudites or as a spread on sandwiches.
Ingredients:
2 red peppers
1 can chic peas
juice of 1 lime
1 tsp cumin
1 tsp sesame oil
2 tsp olive oil
salt and pepper to taste
Directions:
1. Roast the peppers whole in a 450F oven until the skin begins to turn black.
2. Remove from the oven and place immediately in a plastic bag. Let the peppers sit for ten minutes in the bag and then remove the skin and discard along with the inside of the peppers.
3. Place all of the ingredients in a food processor and blend until smooth.
4. Serve with fresh cut veggies.
