Roasted Red Pepper Dip

This dip combines the creaminess of the cheeses with the zesty tang of the roasted red peppers. Served with either crackers of corn chips, it's just SO tasty.
Ingredients:
1 (7 oz) jar roasted red peppers, drained and diced
3/4 pound shredded monterey jack cheese
1 (8 oz) pkg. cream cheese, softened
1 c mayonnaise
1 tbsp minced onion
1 clove garlic, minced
2 tbsp dijon mustard
Directions:
1. Preheat oven to 350 degrees.
2. In a mixer, combine roasted red peppers, both cheeses, mayonnaise, onion, garlic and Dijon mustard. Mix thoroughly.
3. Pour, and spread into a baking dish. Bake for 20 minutes, or until bubbly and lightly browned. Serve warm with miniature bread slices, crackers or tortilla chips.
