Great way to make a healthy dip for veggies that the whole family will love including those picky eaters. The first time I made this it was pizza night...while the pizza baked in the oven,..I wanted to make sure that we got our serving of veggies so I made this dip instead of giving them ranch dressing. Ingredients:
1 32 oz can goya chick peas (rinsed)
1 jar roasted red bell peppers (rinsed)
1/4 cup olive oil
1/2 tablespoon lemon juice
salt and pepper to taste
Directions:
1. Make sure to rinse chick peas and bell peppers
2. In a food processor, add chick peas and roasted red bell peppers and puree.
3. While mixing add lemon juice
4. Continue mixing and add olive oil 1/2 tablespoon at a time ( be careful not to add too much the dip should be stiff and not loose or runny.)
5. Place in a bowl
6. Stir in salt and black or white pepper to taste.
7. Best if served chilled.
8. Serve with pita chips, or raw veggies.
