Can be served as a main meal or as a side dish. Topping a potato in its jacket, or with pasta etc Also good cold as a sandwich filling with Hummus. Scrummy!
Ingredients:
260 grams onions
424 grams aubergine
140 grams green peppers
88 grams zuchini
231 grams red peppers
260 grams cherry tomatoes
15 grams basil
3 tablespoons olive oil
200 grams mushrooms
Directions:
1. Preheat the oven to 175c fan, line a large baking tray with foil.
2. Chop all the veg (except the cherry tomatoes) to the size you like them but it's important that all the veg are roughly the same size because of cooking time.
3. Put all the chopped veg into a plastic bag and add the olive oil, give the veg and oil a good shake and make sure all the veg are covered with oil.
4. Spread on a baking tray and cook for 18 ? 20 mins.
5. Add the Cherry Tomatoes and the torn fresh Basil leaves, cook for a further 15 ? 20 minutes until all the veg are cooked through and beginning to brown.
6. Serve
