Roasted Potatoes

Super easy take on Greek roasted potatoes. They are so yummy and flavorful.
Ingredients:
4-6 potatoes, peeled and cut into chunks (not too small)
1 can of tomato soup
half a can of water
2 cloves of garlic, finely minced
zest of 1 lemon
juice of one lemon
3 tbsp of olive oil
dried oregano, thyme -- good size pinch, but rub herbs in hand to get flavors going
salt and pepper
Directions:
1. Preheat oven to 325 degrees.
2. Whisk tomato soup in a bowl with all ingredients except for potatoes.
3. Put potatoes in a deep casserole dish. Cover with liquid mixture. Toss gently to cover the potatoes.
4. Cover with lid. Bake for an hour.
