Roasted Potato Wedges With Herbs

These are yummy potatoes. They are full of flavor when cooked just right.
Ingredients:
2 tablespoons dijon mustard
1 tablespoon olive oil
1 tablespoon rosemary
1 tablespoon oregano
1 tablespoon parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
1 pound white potatoes or red potatoes, cleaned and cut in half
Directions:
1. Preheat oven to 425°F.
2. Combine all ingredients, except potatoes, in a small bowl.
3. Place potatoes in a large zip-close plastic bag.
4. Add mustard mixture.
5. Close bag and shake to coat.
6. Pour contents of bag into a shallow baking pan coated with cooking spray.
7. Bake, turning occasionally, until potatoes are tender, about 40-60 minutes.
8. (Note: The cooking time is a bit variable, so take that into consideration when making these!)
