Roasted Potato Salad

Ingredients:
2 teaspoons olive oil
1/4 teaspoon salt
4 lbs small red potatoes, quartered
1/2 cup green onion, chopped
1/4 cup fresh parsley, chopped
4 slices bacon, cooked and crumbled
2 1/2 teaspoons balsamic vinegar
1 tablespoon dijon mustard
2 teaspoons olive oil
1/2 teaspoon pepper
1/4 teaspoon salt
Directions:
1. Preheat oven to 450.
2. Combine first 3 ingredients. Arrange evenly on a jelly roll pan coated with cooking spray. Bake at 450 for 30 min or til tender. Let cool. Combine potatoes with onions, parsley and bacon.
3. Combine vinegar and remaining ingredients in a jar. Cover and shake vigorously. Add vinaigrette to potato mixture and toss well.
