Roasted Peppers In Marinade

Great flavors and looks wonderful on a platter with all the different colors
Ingredients:
15 bell peppers, assorted colors, red, yellow,orange, and green
20 garlic cloves, coarsely chopped
3 tbls. plus 1 tsp. sugar
1 1/4 tsp. kosher salt
1 1/4 cups apple cider vinegar
2 cups olive oil
salt and pepper to taste
Directions:
1. Char peppers on grill until blackened on all sides
2. Put in paper bag and seal or place in large bowl and cover with plastic wrap
3. Let steam 10 minutes
4. Peel and seed peppers
5. Cut peppers lengthwise slices
6. Put in bowl
7. Mix garlic, sugar, and salt in bowl
8. Stir in vinegar
9. Gradually whisk in oil in slow stream
10. Pour dressing over peppers
11. Refrigerate overnight
12. When serving, put on plate, discarding leftover marinade
13. Salt and pepper and bring to room temp before serving
