You can prepare the tomato topping and bake the bread several hours ahead. just before serving, spread the topping on the bread and bake! perfect for a gathering of a football game or ufc fight.
Ingredients:
18 slices italian bread,1/2 inch thick
2 large tomatoes,diced(2 cups)
1 jar roasted red bell peppers, drained and chopped
1/4 cup chopped fresh basil leaves
1 tablespoon balsamic vinegar
1/4 teaspoon salt
1/3 cup shredded mozzarella cheese
Directions:
1. Heat oven to 375
2. place bread on cookie sheet bake for 5 min or until toasted
3. mix tomatoes,bell peppers, basil, vinegar and salt
4. spread tomato mix on bread
5. top each slice with about 1 teaspoon cheese
6. bake for 5 min or until cheese is melted...serve hot.
