Ingredients:
1 (7-ounce) jar roasted red bell peppers, drained and chopped
6 ripe tomatoes, seeded and diced
3 tablespoons shredded parmesan cheese
2 tablespoons chopped fresh basil
1 garlic clove, minced
1/2 teaspoon coarse-grained sea salt or kosher salt
1/4 teaspoon freshly ground pepper
24 french bread slices, toasted
Directions:
1. Combine first 7 ingredients; spoon 1 heaping tablespoon over each toasted bread slice.
