Roasted Pecan Apple Salad

This delicious salad combines sweet apples and roasted pecans with tangy watercress and blue cheese to make music in your mouth. Who needs a main course?
Ingredients:
salad
1 head red leaf lettuce
1 head bib leaf lettuce
1 c watercress
2 red delecious apples
3/4 c blue cheese
3/4 c roasted pecans
roast pecans
3/4 c chopped pecans
1/4 c corn syrup
1/4 c butter
2t water
1/4 tsp salt
dressing
1/4 c walnut oil
1/4c cyder vineger
2t shallot (finely chopped)
2 t lemon juice
1/4 tsp salt
Directions:
1. Preheat oven to250
2. Bring corn syrup, butter, water, and salt to boil
3. Add pecans and stir a few minutes
4. Spread on well greased cookie sheet
5. Bake for an hour and stir every ten minutes.
6. Slice apples thin and length wise.
7. Hint: when sliced place them in a bowl with cold water and cyder vinegar, this will prevent them from browning.
8. On individual plates place a nice big leaf of the bib lettuce. Then place the salad mixed with dressing on top. Place the thinly slice apple in a radial circle and sprinkle your roased pecans and blue cheese.
