Roasted Pear Salad

Oven roasted pears,tossed with crispy greens,dried cranberries and nuts. The creamy dressing adds more pear flavor with a touch of honey.
Ingredients:
2 med pears,halved and cored
4 tsp olive oil
2 tb cider vinegar
1 tsp water
1 tsp honey
1/4 tsp salt
1/8 tsp white pepper
1 pkg. (10 oz) mixed baby salad greens
1 c watercress sprigs
Directions:
1. In small bowl,toss pears with 1 tsp oil. Place on 15x10 jelly roll pan,coated with spray.Roast at 400' for 10 mins. Turn pears and roast 5-7 mins longer or till golden and tender.
2. When cool enough to handle,peel pears. Thinly slice 2 pear halves lengthwise and set aside.Place remaining pear halves in blender. Add vinegar,water,honey,salt and white pepper;cover and process till smooth. While processing,gradually add remaining oil in steady stream.
3. In large bowl,toss salad greens,watercress,hazelnuts and cranberries. Arrange reserved pear slices on top;drizzle with dressing.
