Roasted Parsnips With Honey And Ginger

Ingredients:
6 parsnips
1 teaspoon salt
1/4 cup vegetable oil
1 tablespoon butter
1 tablespoon honey
1 tablespoon finely grated or chopped fresh ginger
Directions:
1. Preheat oven to 425 then cut peeled parsnips in half and remove any woody cores.
2. Put in a large saucepan and cover with water then add pinch of salt and bring to boil.
3. Boil 1 minute then drain and return to saucepan and dry well by shaking saucepan 1 minute.
4. Heat oil in a roasting pan on the stove then add parsnips and cook quickly over high heat.
5. Add butter to pan then transfer to oven for 10 minutes then spoon or pour out the excess oil.
6. Add honey and ginger turning parsnips to coat evenly and roast another 5 minutes.
7. Lift parsnips out of pan and serve hot.
