Roasted Parsnip And Parmesan Soup

This dish is soooo tasty. Uses up leftover roasted parsnips.
Ingredients:
calling all leftover roasted parsnips...
here's my recipe for roasted parsnip soup...
•leftover roasted parsnips
•50 g freshly grated parmesan cheese
•medium onion finely chopped
•1.5 litre vegetable stock
•salt and black pepper
• couple table spoons double cream
Directions:
1. Cook the onion gently in a big pan/wok until soft.
2. Add the stock, stirring constantly and bring to the boil.
3. Add the roasted parsnips and simmer covered for 20 minutes.
4. Liquidise the soup with the cheese until smooth.
5. Stir in the cream, taste for seasoning and reheat.
6. Add some grated cheese to the top. Voila!
