Ingredients:
2 medium onions
1/2 teaspoon minced capers
1 tablespoon balsamic vinegar
1 tablespoon tomato ketchup
1/4 teaspoon rosemary
1/4 teaspoon black pepper
Directions:
1. Preheat oven to 400.
2. Place onions on a baking sheet and roast in a preheated oven until soft, about 1 hour. Let cool to room temperature and then peel and mince. (You should have 1 cup).
3. In a bowl, combine onions, capers, vinegar, ketchup, rosemary and pepper.
4. Serve immediately or refrigerate up to 3 days.
