Roasted New Potatoes With Lemon Horseradish

Delish! Especially good with beef. Can be made in oven or microwave! If you can't find the small new potatoes, use red potatoes and cut into wedges or thick slices.
Ingredients:
1/4 cup butter
1/2 teaspoon salt (or to taste)
1/8 teaspoon pepper
1 tablespoon prepared horseradish
2 teaspoons lemon juice
12 red potatoes, unpeeled except for 1/2 inch strip around center of each potato (1-1/2 pounds)
1 small lemon, cut into 6 sliced, halved
2 tablespoons chopped fresh parsley
Directions:
1. Heat oven to 350ยบ.
2. In 2 quart casserole melt butter in oven 3-4 minutes.
3. Stir in salt, pepper, horseradish and lemon juice.
4. Stir in potatoes until well coated.
5. Cover; bake for 55-65 minutes or until potatoes are fork tender.
6. Garnish with lemon slices and sprinkle with parsley.
7. MICROWAVE: In 2 quart casserole melt butter on HIGH 50 to 60 seconds.
8. Stir in salt, pepper, horseradish and lemon juice.
9. Stir in potatoes.
10. Cover; Microwave on HIGH, stirring after half the time, until potatoes are fork tender (10-12 minutes).
11. Let stand 5 minutes.
12. Garnish with lemon slices and sprinkle with parsley.
