Roasted Mushrooms (21 Day Wonder Diet: Day 13)

This is Day 13: Breakfast, on the 21 Day Wonder Diet.
Ingredients:
4 flat mushrooms
1/2 cup low-fat ricotta cheese
2 tablespoons flat leaf parsley, coarsely chopped
2 green onions, chopped finely
1 garlic clove, crushed
Directions:
1. Preheat oven to 200°C.
2. Place mushrooms, stem side up, on oven tray. Roast, uncovered, about 15 minutes.
3. Meanwhile, combine remaining ingrediens in small bowl.
4. Serve mushrooms topped with cheese mixture.
