Roasted Loin of Pork With Pan Gravy

Juicy, tender pork covered in a pan gravy that is packed with flavor. Great to serve to guests! My mother-in-law who can't cook demanded I teach her how to make this!
Ingredients:
2 tablespoons butter
1/2 teaspoon black pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon thyme
1 teaspoon oregano
1/2 teaspoon dry mustard
2 garlic cloves, minced
3 -4 lbs pork loin
1 stalk celery, diced
2 medium carrots, diced
1 large onion, diced
3 tablespoons flour
1/2 cup pork stock or 1/2 cup chicken stock
salt and pepper
Directions:
1. Preheat oven to 300°F.
2. Heat butter in skillet over medium heat. Add spices, herbs, mustard and garlic. Cook 1 minute.
3. Make several small incisions in roast. Stuff slits with spice mixture and spread remaining mixture all over roast.
4. Place roast in roasting pan and surround with vegetables. Season with salt and pepper. Cook 2 hours, or to desired doneness.
5. Fifteen minutes before the end of cooking, increase oven temperature to 425°F.
6. Remove roast from pan and let stand for 10 minutes.
7. Place roasting pan on stove over medium heat. Add flour, whisk and cook 3 minutes. Incorporate stock and continue cooking for 5 minutes. Strain sauce and serve with roast.
