Roasted Jalapeno Poppers

eEasy and delicious appetizer. Can also do on the grill. You can swap out the cheeses to your taste.Recipe by Rachael Ray. Made these over the weekend. Yummy!
Ingredients:
12 large jalaoeno peppers
2 oz. feta cheese
4 oz. cream cheese
4 oz shredded smoked pepper jack,or other hot pepper cheese,or extra-sharp cheddar
small handful fresh cilantro,finely chopped
2 tb grated onion.
Directions:
1. Preheat oven to 425'
2. Cut 1/3 of each pepper lengthwise and scoop out the seeds. Place on baking sheet. If peppers do not sit flat,slice thin piece off bottom.
3. Mash feta,cream cheese,shreeded cheese,cilanto and onion together and stuff peppers.
4. Roast for 15 to 18 mins or till peppers are tender and cheese is brown at edges and bubbly.
5. This would be delicious in mini sweet peppers also.Also wonderful with a little chorizo mixed in!
