Roasted Garlic Potato Skins

These will satisfy any garlic lover
Ingredients:
6 baking potatoes
1 head garlic
3/4 stick butter, softened
salt and pepper to taste
parsley, finely chopped to garnish
Directions:
1. Preheat oven to 350
2. Prick holes in potatoes
3. Cut off top 1/4 of garlic head
4. Wrap garlic in foil
5. Bake potatoes for 1 hour and garlic for 1 hour 15 minutes
6. Remove from oven
7. Increase oven temp. to 425
8. Halve potatoes and then cut each half into 4 wedges
9. Scoop out potato flesh leaving 1/4 inch to skin
10. Squeeze garlic paste into mixing bowl
11. Add butter, salt and pepper and mash to a paste
12. Evenly spread garlic paste onto potato skins
13. Bake in baking dish, single layer until crisp and golden (about 20 minutes)
14. Sprinkle parsley over top
