Roasted Garlic Onion Jam

We were serve a roasted garlic onion jam as an appetizer, on pieces of bread with a smear of Brie cheese. What a tasty delight. I bought a jar of it the next day...$9 for an 8 oz jar. Needless to say after a glance at the ingredient list I was sure I could create an acceptable version at a much lower cost. Read more . I use this on sandwiches, my favorite is a bacon, lettuce, sundried tomato jam and roasted garlic onion jam sandwich. It is also great as an appetizer or snack on crackers or bread with or without a bit of gorgonzola, Brie, or a good Chevre goat cheese.
Ingredients:
6 cups onion, thinly sliced (i like the sweet onions for this)
2 heads of garlic with the tops cut off to expose the ends of the cloves
3 + 1 t olive oil
1 cup water or chicken stock
1 t + 1/4 c sugar
1/4 c cider vinegar
2 t balsamic vinegar
1 teas thyme
salt and pepper
1 package sure jell for low or sugar free recipes
Directions:
1. Preheat the oven to 425 F
2. Place the garlic heads on a piece of heavy tinfoil
3. Pour 1/2 of a T of olive oil over the cut end and salt and pepper
4. Loosely wrap in the foil and bake for 45 minute or until the garlic is browning and the cloves squeeze out easily and are soft and buttery. Cool
5. In a medium pot bring the 3 T of olive oil up to saute meadium heat and add the onion.
6. Saute until the onions are are soft and have started to caramelize.
7. Sprinkle with the T. of sugar, salt and pepper to taste.
8. Continue to cook until the onion are darkened and soft.
9. Squeeze out the roasted garlic and mash to form a soft puree.
10. Stir into the onion.
11. Add the stock, vinegars, thyme, and sugar
12. Bring to a boil and reduce to a simmer
13. Cook until the liquid reduced by half.
14. Taste and adjust seasonings (vinegar, sugar, salt and pepper)
15. Stir in the Sure Jell and return to a boil.
16. Remove from the heat and cool.
