Ingredients:
1 1/2 pounds fingerling potatoes
4 tablespoons olive oil
8 garlic cloves, sliced
1 tablespoon freshly chopped italian parsley leaves
salt and freshly ground black pepper
Directions:
1. Preheat the oven to 350 degrees F.
2. In a casserole dish, mix together the potatoes, oil, garlic, parsley, salt, and pepper. Roast for 20 minutes or until the potatoes are tender.
