Roasted Garlic And White Cheddar Mashed Potatoes

I came across this recipe when I was searching the net a few months ago. Made this last night for dinner and it was a huge hit. Easy to make, but so full of great flavors.
Ingredients:
2 lg baking potatoes
3 unpeeled garlic cloves
1/2 tsp olive oil
1 cup shredded white cheddar
2 tsp butter
2 tsp cream
1/4 tsp white pepper
1/2 tsp minced fresh basil
Directions:
1. Set the oven to 325 and place 3 garlic cloves in a small ramekin or aluminum foil.
2. Don't peel the cloves or they'll develop a tough skin.
3. Drizzle the olive oil over the cloves and place in the oven and roast for 15 minutes.
4. Bring 2 quarts of water to a boil while you peel the potatoes and cut them into chunks.
5. Add them to the boiling water and boil 15 minutes.
6. Heat butter and cream over very low heat to melt the butter.
7. Shred the cheese and mince the basil.
8. Take the garlic out of oven and peel.
9. Drain the potatoes.
10. Mash the galric a bit with a fork.
11. Place all ingredients in an oven proof bowl and add salt to taste.
12. Using a potato masher quickly mix everything together until smooth.
13. Enjoy.
