Roasted Garlic

A delicious way to make roasted garlic. If you don't use all the garlic, it can be put in a small container and frozen,then add to sauces ect., You can eliminate the thyme but it adds nice flavor.
Ingredients:
4 whole heads of garlic
4 ounces extra virgin olive oil
kosher salt
fresh ground black pepper
4 whole fresh thyme sprigs, cut in half
Directions:
1. Heat oven to 350 degrees.
2. Cut the top 1/4 off the garlic. Place in ovenproof dish just large enough to hold the 4 heads of garlic.
3. Generously brush the top of the garlic with olive oil.
4. Pour the remaining oil into the bottom of the dish.
5. Cris-Cross the thyme over the top of the garlic. Season lightly with kosher salt.
6. Cover the dish and bake for 1 hour and 15 minutes.
7. Remove the cover and put back into the oven until golden. About 20 minutes.
8. Spread the warm garlic over crusty bread. Use the remaining warm oil for dipping.
