Ingredients:
1 eggplant
1 red pepper
1 green pepper
10 asparagus spears
1 red onion
4 yellow squash
1/4 c olive oil
Directions:
1. spray roasting pan with PAM
2. cut all veges in cubes and layer
3. sprinkle salt and pepper
4. drizzle olive oil
5. roast in 425 oven 30 minutes
