Roasted Elephant Garlic Spread

If you think you don't like garlic, this recipe may change your mind. when Garlic is roasted it gives off a mellow, sweet taste. I eat it spread on toast points
Ingredients:
2 heads elephant garlic
2 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon ground black pepper
Directions:
1. preheat oven to 350.
2. seperate garlic into cloves.
3. remove papery outer coating from the garlic.
4. cut 1 inch from top of each clove.
5. place in a 1 quart casserole dish.
6. drizzle with oil and sprinkle with salt and pepper.
7. cover and bake 1 hour 30 minutes.
8. squeeze warm cloves out of skin and smash with a fork.
