Roasted Corn Salad

A great salad for any family gathering or BBQ. Corn can be roasted over coals if wanted. However this dish needs to be done 1 day ahead.
Ingredients:
6 ears fresh corn
1/2 red pepper chopped small
1/2 green pepper chopped small
1/2 orange or yellow pepper chopped small
1/2 sweet or red onion diced small
1 can black beans drained
dressing
juice of 4 lemons
4 cloves garlic minced
salt and pepper to taste
1 tbls hot sauce
3/4 - 1 cup chopped cilantro (fresh, washed and pressed dry.
1/2 cup olive oil
1 avocado sliced into small pieces
1/2 cucumber chopped small
Directions:
1. Husk and clean ears of corn.
2. Place in heavy foil, fold closed.
3. Roast in a 325 degree oven for 30 to 45 minutes.
4. Cool and cut off cob.
5. Mix with peppers, onion and beans.
6. Dressing: blend together and add sugar to taste.
7. Pour over veggies and let sit overnight.
8. A few hours before serving add avocado and cucumber
