Roasted Chicken With Grapes and Fresh Ginger

A wonderful way to prepare your chicken based on an old Jewish recipe very moist and tender.
Ingredients:
3 1/2 lbs chicken, whole insides removed
4 tablespoons ginger, fresh grated
6 garlic cloves, minced
1/4 cup lemon juice, fresh squeezed
2 tablespoons extra virgin olive oil
1/2 teaspoon ground cinnamon
1/2 teaspoon salt, kosher
1/2 teaspoon ground black pepper
1/2 cup green seedless grape
1/2 cup red seedless grapes
1/4 cup shallot, chopped
Directions:
1. Mix 2 tablespoons ginger, 3 cloves garlic, lemon juice, olive oil, cinnamon, salt and pepper in a small bowl.
2. Pour into a ziplock bag big enough to fit chicken into. (I use gallon size freezer bags.
3. Add chicken to ziplock bag.
4. Let marinate in fridge for 2 to 24 hours. (longer is better).
5. Cut grapes in half.
6. Preheat oven to 350.
7. Remove chicken from ziplock bag and place in a frying pan over medium heat.
8. Brown all sides of chicken.
9. Place chicken in roasting pan.
10. Add remainder of ginger, garlic, shallots and as many grapes to chicken cavity that will fit.
11. Roast chicken for 1 1/2 hours.
12. Check to make sure chicken is completely cooked, if not add more time.
13. Enjoy.
