Roasted Cauliflower and Mushrooms

Different way to serve cauliflower.
Ingredients:
1 head cauliflower, broken into flowerets
8 ounces mushrooms, quartered
1/2 cup chopped onion
3 garlic cloves, minced
2 tablespoons olive oil
3 teaspoons lemon juice
3 teaspoons cider vinegar
1/2 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon curry powder
1 teaspoon parsley
Directions:
1. Preeat oven to 350.
2. Spray a casserole dish with cooking spray.
3. Place cauliflower and mushrooms in a large bowl; add all remaining ingredients and toss together well.
4. Pour into prepared casserole dish.
5. Bake, uncovered, 40-45 minutes (stir occasionally) or until vegetables are tender and golden.
