Fantastically simple vegetable side dish. You know me and conversions, serve over a rice or with risotto for a vegetarian main dish.
Ingredients:
1 head of cauliflower
1-2 cloves of garlic
4 tbls olive oil (maybe more depending on size of head)
1 tlbs red pepper flakes
salt & pepper
Directions:
1. Heat Oven to 400 Degrees
2. Rough chop cauliflower, leaves and all.
3. Mince Garlic
4. Toss Cauliflower with oil, garlic, red pepper flakes and salt and pepper.
5. Place in a roasting pan
6. Roast in oven until cooked through and beginning to brown, about 40 minutes.
