Roasted Cajun-Spiced Edamame

These roasted soybeans have 20 percent less fat than packaged flavored soy nuts. For a reduced-sodium version, use salt-free Cajun seasoning.
Ingredients:
1 (16-ounce) package frozen shelled edamame, thawed
olive oil-flavored cooking spray
1 tablespoon cajun seasoning
1 teaspoon onion powder
1/4 teaspoon kosher salt
Directions:
1. Preheat oven to 300°.
2. Arrange edamame in a single layer on a baking sheet; lightly coat with cooking spray.
3. Combine Cajun seasoning, onion powder, and salt; sprinkle over edamame, and toss to coat. Bake at 300° for 1 hour and 45 minutes, stirring every 30 minutes. Cool completely. Store in an airtight container.
