After shoveling snow for several hours this morning, I was hungry but in no way felt like cooking! This roasted veggie duo is not only easy to make, it's easy to clean-up and having the oven on at that high a temp warmed up the house! Read more !
Ingredients:
1 green or red cabbage
2 tablespoons olive oil
coarse salt and ground pepper
handful or more of grape tomatoes
splash of balsamic vinegar
pinch of brown sugar
Directions:
1. Preheat oven to 450 degrees.
2. Shred cabbage or cut cabbage into 12 wedges; pull wedges apart. Toss on a large rimmed baking sheet with whole grape tomatoes, oil, 2 teaspoons salt, and 1/4 teaspoon pepper. (Lining the baking sheet with aluminum foil makes clean-up SO much easier!)
3. Cover sheet tightly with foil. Bake until cabbage is crisp-tender, about 20 minutes.
4. Remove foil; sprinkle with balsamic & brown sugar. Mix well and continue cooking, until tender and browned in spots, 20 to 25 minutes more.
