Roasted Beets And Roots Salad With Oranges

You can make this on the grill as well, or bake it for a loooong time. It is worth it - it is very tasty and healthy, too.
Ingredients:
6 beets
6 carrots
6 parsnips
2 garlic bulbs
2 large red onions
4-5 spoons olive oil
salt and pepper
2 tsp honey
2 tsp balsamic vinegar
3 oranges
1 tbsp diced mint
Directions:
1. Peel and chop vegetables in small cubes. Set onions on the side. Mix the rest of the veggies with salt and pepper and olive oil. You can keep the garlic in peel and squeeze them out once they are roasted,or peel them ahead. Roast at 425F for 35 minutes. Add the peeled and cut onions and roast another 15 minutes. Mix all the rest in a bowl with the roasted vegetables and serve.
