Low-fat, low-cal, low-carb, tasty asparagus side dish or main dish.
Ingredients:
24 asparagus spears
1 1/2 tbsp olive oil
1/2 tsp salt
1/2 tsp pepper
Directions:
1. Preheat oven to 450 degrees.
2. Rinse asparagus and snap off the woody ends (approx. bottom third) of each stalk. Toss asparagus with olive oil, salt, and pepper.
3. Lay asparagus across foil-lined baking sheet and bake for 10-15 minutes until they are tender but still bright green.
4. If desired, you may sprinkle with parmigiano reggiano cheese or drizzle a little lemon juice or balsamic vinaigrette.
