Roasted Apple and Salmon Salad

Ingredients:

Directions:

  1. Preheat oven to 425 degrees.
  2. Rub salmon all over with 1 tsp olive oil and season to taste with salt and pepper.
  3. Roast skin side down on a foil lined baking sheet in upper third of oven until fish is just cooked through, about 12 minutes.
  4. At the same time, drizzle apple with 1 tsp olive oil and roast until tender, about 12 minutes.
  5. To prepare the dressing, whisk together all ingredients until combined.
  6. Cut salmon in half corsswise, lift flesh from skin with a metal spatula and transfer to a plate; discard the skin.
  7. Drizzle salmon with olive oil and sprinkle with chives.
  8. Arrange salad greens on two plates and sprinkle with pumpkin seeds, and arrange the apples and salmon.
  9. Drizzle with dressing to taste.
