Roast Vegetables

I do lots of baked vegetables as an accompaniment to dinner or to bring to work to microwave at lunchtime.
Ingredients:
butternut pumpkin
zucchini
red onion
capsicum
carrot
celeriac
parsnip
leek
1/2 cup chicken or vegetable stock
rosemary
Directions:
1. Preheat oven to 180 degrees
2. Select 4 from the list of vegetables
3. Peel and cut into large chunks.
4. Hard vegetables such as carrot can be steamed first.
5. Place into a baking dish and add the stock See Photo
6. Spinkle with rosemary
7. Place in oven for 30 minutes
8. Check on the vegetables half way through and toss them.
9. Vegetables are done when you can pierce them with a fork.
